Traditional Tadka Curd Rice

Ingredients

  • Soft Cooked Rice1 Cup
  • Fresh Whisked Curd1.5 Cups
  • Grated Carrots2 tbsp
  • Ghee (for Tadka)1 tbsp
  • Mustard Seeds & Hing1 tsp
  • Ginger & Green ChiliesFinely Chopped
  • Curry Leaves & CorianderFresh

Instructions

Take soft cooked rice and mash it thoroughly. The more you mash it, the easier it is to digest and the creamier the texture becomes [00:05:29].

Fold in the fresh whisked curd and add grated carrots. The carrots add a wonderful "bite" and crunch to contrast the soft rice [00:03:01].

Heat ghee in a pan. Add mustard seeds, urad dal, dried red chilies, ginger, and curry leaves. Let them splutter to release their essential oils [00:03:21].

Pour the aromatic tadka over the curd rice. Add salt to taste and fresh coriander. Mix well and serve at room temperature or chilled [00:05:42].
